Frozen berries: types, composition, benefits and methods of freezing
Everyone is trying to take from the warm summer to the maximum. Someone cooks compotes, prepares pickles. But, vitamins in such preparations are not very many, because they are killed by heat treatment and preservatives. The most correct solution to the problem with winter and spring avitaminosis is to procure frozen berries. In this article we will talk about the benefits, properties and contraindications of freezing. Also share ways to harvest frozen berries at home.
Who came up with the freeze?
First of all, I would like to plunge into the past for a moment, and tell you about a person who has revealed to the whole world all the charms of storing frozen foods.
The idea came to mind the English philosopher Francis Bacon. In 1626, he thought about the fact that under the influence of cold tissue should not quickly deteriorate. The philosopher decided to experiment on a chicken carcass, which he generously stuffed with snow.
Unfortunately, no one could find out about the results of this study, since the experimenter overdid himself with being in the cold and died from a cold!
Almost three hundred years have passed, and the American businessman Clarence Berdsi decided to continue the Bacon case. Once a man saw how Canadian fishermen put their catch in the snow, it freezes and is safely transported in this form. Since 1916, a businessman has developed his idea, and already in 1924 the first frozen products arrived at the store shelves.
Thanks to the tricks of freezing in food, the maximum amount of useful substances is preserved. Taste and aroma does not suffer from this.
We offer to return to the topic of today's publication and get acquainted with the charms of frozen berries.
What berries can I freeze?
Absolutely any berries can be placed in the freezer: strawberries, gooseberries, blueberries, lingonberries, cranberries, honeysuckle, black currants, raspberries, mountain ash, cherry and many others. Each berry is endowed with a unique composition of vitamins. In some many vitamin C, in others iron prevails. In winter, such products will help to easily survive the cold season, quickly cope with ARVI, and just enjoy the taste of summer!
There are berries that are not recommended to freeze. This is a red currant and wild strawberry. The fact is that at low temperature these berries appear bitter in taste. But if you are going to make compote from them, then go for it, put it on the shelf of the freezer!
At what temperatures freeze berries
The first method is suitable for everyone, as the technology uses a simple freezer. The method is called dry and takes place in three stages:
- Put the berries in a place where the air temperature is not higher than +18 degrees, hold them there for a couple of hours.
- Transfer the berries in the refrigerator (not in the freezer), they should cool.
- Put the freezer at -20 degrees, put the berries in it in a plastic bag.
It is recommended to make holes in the bag so that frost does not form. Of course, if fish, meat, and other sharp-smelling products are stored on the freezer shelf, you can’t perforate the bag, because no one wants to eat berries with herring flavor!
The second method is considered the best, since during freezing almost all the vitamins are saved, they just do not have time to freeze out - this is a quick freeze. Another advantage is the preserved form of frozen berries after defrosting.
For deep (fast) freezing, you must set the temperature in the freezer to -40 degrees.
The content of vitamins and minerals in the berries is different, it all depends on their type. But there are also a number of useful substances that are characteristic of all fruits, these are:
- malic and phosphoric acid;
- vitamins A, PP, C, B1and B2.
Frozen berries are especially useful for a child at a time when fresh is simply not found. The baby needs to receive complexes of vitamins and minerals for healthy growth and strong immunity.
All berries are unique, each type is endowed with unique taste and not less unique properties. For example, sea buckthorn is good in the fight against avitaminosis, gooseberry helps with anemia, black currant is rich in vitamin C, and therefore it must be taken with a long course of cold.
To more accurately know what berries to eat in one way or another, you need to familiarize yourself with the composition of fresh fruits. As mentioned earlier, almost all nutrients remain frozen during freezing, which means that the composition of frozen berries and fresh ones will be practically the same.
Frost contraindications are exactly the same as when using fresh berries. For example, if you have an allergic reaction to cranberries, then you should not eat frozen foods.
Advantages of freezing
Some will say that it is better out of habit to make compotes and jams. But it is possible to argue with them, because the berries in frozen form are very different from those that have undergone heat treatment.
- As already mentioned, at elevated temperatures, many vitamins and minerals break down. Minimal damage to beneficial substances causes cold.
- Frozen berries are less calorie, unlike jam and compote, because they contain only natural sugar.
- The color, taste and aroma of the fruit when frozen does not practically change, which is not the case with dried berries.
- Berries in frozen form can be used not only for treats and colds, but also as a cosmetic. Everyone agrees that you can not make a nourishing face mask out of compote!
The correct way to freeze
In the photo, frozen berries look fresh. They have saved the form, color. But few people can boast of the same condition of the fruit when it is frozen at home.
We decided to share a little trick that will help keep the shape of the berry when frozen:
- Do not use ripe berries to freeze.
- Do not wash the berries before freezing, just clean the leaves, pedicels and other unnecessary debris.
- Spread the berries in a single layer on a baking sheet, and only in this form, place in the freezer. As soon as the fruit is frozen, pour it into the bag.
Yes, it will take a lot of time to freeze, but still the result will please.
Some prefer to freeze various berries in the form of mashed potatoes. Thus, the product occupies a minimum of shelf space.
Compote and freeze jam
It is interesting to the sweet tooth whether it is possible and how to cook frozen berries. We hurry to please - it is possible, and the method is simple:
- Thaw the berries, sprinkled them with sugar (determine the amount yourself, taste everything).
- Put the berries in an enamel pot on the fire, bring to a boil, stirring constantly.
- Get the freshest jam! Just do not add water.
How to cook the compote of frozen berries? Is it worth doing? After all, we are talking about the benefits. Just put a handful of frozen fruits in a glass, crush them with a spoon or fork, add honey (you can sugar, and you can without additives), pour the contents not with boiling water, but hot water.
If you really want a boiled compote, then use the classical method. In the pan, place the berries in the required amount, sugar, pour water, put on the fire and bring to a boil.
